Sunset Picnic On "The River"

It's been a perfect day! The weather was in the high nineties....You started the day by skiing on perfect glass on the River....You had brunch at the Avi. You played all day on the River...skiing, wake boarding, jet skiing....all because the weather was perfect, there were so few other boaters and there wasn't any of the "w..." blowing....A perfect day! So what better way to end the day than by having a picnic while sitting on your boat watching the sunset over the Colorado River?
So, what sounds light and refreshing to eat....How about
Chevre (goat)Cheese with Fresh Lemon/Crackers
Shrimp Salad
Strawberries with Balsamic Vinegar and Whip Cream

Things you'll need:
- Small cutting board
- Sharp knife
- Plastic or Paper Plates and bowls
- Eating utensils
- Plastic wine goblets
- Wine opener
Grocery List:
1 small package goat cheese 1 lemon (Meyer preferably)
sea salt strawberries
crackers (firm, salty ones) 1 package Romaine (preclean)
balsamic vinegar baby cherry tomatoes
can of sliced olives avocado
cooked/clean large shrimp can of whipped cream
bottle of your favorite dressing bottle of chardonnay or
loaf of great bread/butter sauvignon blanc
The morning before you leave on the boat, take a lemon zester and remove all of the lemon rind. Place the rind in a tiny bowl/ramekin covered in plastic. Save the lemon for the picnic. Clean the strawberries, cut them in half and place them in a tupperware bowl. Drizzle just a slight amount of balsamic vinegar over them (believe it or not, the vinegar makes them taste like vanilla...ummm...). Drain the canned olives and place the olives in plastic bag. Clean the tomatoes and place in baggie. And now, pack everything into a small ice chest (including the denuded lemon) and you are ready to go!
Set anchor up in the beautiful canyon north of Lake Havasu....Cork the wine....Place the goat cheese on a plate, cut the lemon in half and drizzle lemon juice over the cheese (drizzle a lot!). Sprinkle the lemon zest over the cheese and then sprinkle the sea salt lightly on top. Serve with crackers.
Next, open the lettuce and divide it between the plates. Sprinkle the tomatoes, olives, avocados and shrimp on top. Drizzle the dressing over and enjoy! The sun is getting lower into the horizon and the color of the skyline is getting more red by the minute!
Time for dessert! Divide the strawberries into bowls and top with the whipped cream. Enjoy! The sunsets of the Colorado River are the best!
Now, carefully maneuver the boat back to the launch ramp (the boat driver only had one glass of wine, right?). Put the boat back on the trailer and head back to All Seasons Storage. Now this is the time that you really enjoy having boat storage in Needles, Ca. Roy and Sandy will be glad to clean it and have it all ready for your next day of play on the Colorado River in Needles, Ca!
